S’MORES COOKIE BARS

Who doesn’t love sitting by the fire and roasting s’mores on a beautiful summer night?! That is probably one of my favorite things to do when I get together with friends of family.

When I was younger, my siblings and I loved s’mores so much that in the winter when we couldn’t go outside, my Mom would make us s’mores either in the microwave or stove top (as we got older)! It was the best thing ever….until my Mom found a recipe for something called S’more Cookie Bars. Now this was the best thing ever, we could have s’mores at any time we wanted to!

This recipe is very delicious and easy to make. Your friends and family will love these soft, gooey and yummy S’more Cookie Bars. I could eat a whole pan of these they are so good…I almost did once but that is a whole other story!

Anyway, I hope you enjoy these and that they turn out as good for you as they did for me!

INGREDIENTS

1/2 cup butter, softened

2/3 cup light brown sugar

1 egg

1 teaspoons vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cups All-Purpose Flour

3/4 cup fine graham cracker crumbs

1/2 cup marshmallow cream

1/2 cup chocolate semi-sweet chocolate chips (or a little more if you love chocolate!)

DIRECTIONS 

  1. Preheat oven to 350ºF. Line an 8×8 baking dish with parchment paper or foil.
  2. Beat together the butter and sugar. Mix in the egg and vanilla.
  3. Mix in the baking soda, salt, flour, and graham cracker crumbs until dough forms.
  4. Press 3/4 of the dough into the bottom of the prepared baking dish. Spread the marshmallow cream over top. Sprinkle the chocolate chips over the cream.
  5. Press the remaining cookie dough over top of the chocolate chips. Bake for 20 minutes.
  6. Let cool before cutting and serving.

DUMP-AND-BAKE CHICKEN CAPRESE PASTA

School is starting and lives are getting even busier! Times like this are when having easy to little effort meals come in handy! With this simple and classic Italian meal, you can feed your family in no time…did I mention its only 5 minutes of prep!

DUMP-AND-BAKE CHICKEN CAPRESE PASTA

Prep 5 minutes   |    Cook 45 minutes     |     Total 50 minutes

Serves 8 people

The great thing about this recipe is that you don’t have to boil the pasta for this Dump-and-Bake Chicken Caprese Pasta! Did I also mention that it is quick and healthy?!

INGREDIENTS

2 cups diced, cooked chicken

1 3/4 cups halved grape tomatoes (can substitute with a can of undrained diced tomatoes)

12 ounces (about 3 cups uncooked) uncooked penne pasta

3 ½ cups low-sodium chicken broth

8 ounces (about 2 cups) shredded mozzarella cheese, divided

½ cup chopped or torn fresh basil leaves, divided

2 teaspoons minced garlic

½ teaspoon salt

INSTRUCTIONS

Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.

In the prepared dish (or in a separate bowl), stir together cooked chicken, tomatoes, uncooked pasta, chicken broth, 1 ½ cups of mozzarella cheese, about half of the basil leaves, minced garlic, and salt.

Cover the dish tightly with foil and bake for 40 minutes.

Uncover; stir. At this point you should check the pasta to make sure that it is al dente (firm but just about finished cooking). If it’s still too hard, cover the dish and return to the oven until pasta is al dente. Then move on to the next step.

Sprinkle remaining ½ cup of mozzarella over the top. Bake uncovered for 5-10 more minutes (or until cheese is melted and pasta is tender).

Garnish with remaining basil leaves just before serving.

There you have it, the quick, easy and healthy, Dump-and-Bake Chicken Caprese Pasta!

I am all about simplicity these days, especially when it comes to meals. There are only 5-Ingredients in this slow cooker steak fajitas recipe.  This easy yet delicious slow cooker dish is perfect any day of the week.

For this slow cooker recipe it uses only 1 bell pepper.  Normally I would follow it exactly, but I wanted more veggies so I used two – a combo of red and green. For the salsa, use 20 ounces of your favorite brand. I gave everything a good stir before putting the lid on so the salsa and seasonings are distributed evenly.

5-INGREDIENT SLOW COOKER STEAK FAJITAS

4 hours

TOTAL TIME

4 hours 5 mins

Serves: 6 servings

INGREDIENTS

  • 2 lbs. beef, sliced
  • 1-2 bell peppers, sliced
  • 1 onion, sliced
  • 20 ounces salsa
  • 2 tbsp. fajita seasoning

INSTRUCTIONS

  1. Add salsa to bottom of the slow cooker.
  2. Add beef, onion, bell pepper and fajita seasoning. Stir to mix well.
  3. Cook LOW 6-8 hour or HIGH 3-4.
